Frantoio Artigianale Toscano” (Artisanal Tuscan Oil Mill), as defined by Paolo and Nilo, the two brothers who manage the Oliviera Sant’Angelo in Castelmuzio, a hamlet of Trequanda. The two brothers carry on the family business which consists in the cultivation of about 3000 olive trees and in the management of the mill, defined as artisanal because extra virgin olive oil is carefully extracted from the olives of the same company and those of small farmers of the area.

"The Frantoio comes back to life starting from October, when the small farmers of the area come to us to extract the oil from their olives" says Paolo: "it is nice to hear the noise of the machines, the producers voices, the comings and goings of people, after months of silence". In fact, if you visit the mill in October and then in February, as we did, you will have the impression of being in two different places, but the welcome is always excellent: Paolo always prepares a table ready for tasting. Because oil is made and tasted here. In Castelmuzio, Paolo and Nilo take care of their olive trees, which must be cared for throughout the year, as well as the machines that are then activated continuously only in October and November. The Frantoio is a point of reference for the local community, which also turns to the Oliviera Sant'Angelo for the pressing of even small quantities because it is equipped with a continuous extraction system and has the authorization for the pressing of DOP Terre di Siena, Tuscan IGP, and Organic EVO Oil. The oil is cold-extracted, at a maximum controlled temperature of 26 degrees and the oil is stored in stainless steel food-containers with nitrogen saturation to maintain the properties of the product over time thus avoiding oxidation, at a temperature of 15-17 Celsius degrees.

A majestic stone mill in the center of the mill suggests that the oil is extracted as it once was, but the touch screen and the automatic systems immediately bring us back to 2021, because the oil is produced here with attention to tradition but above all with great attention to quality and result. And the result is an oil that offers a wide range of flavors and aromas deriving from the typical varieties of Tuscany: Frantoio, Correggiolo, Moraiolo, Leccino, Pendolino. A strong and spicy Tuscan flavor that honors all the attention in the manufacturing process.
