"Taste comes first" says Massimiliano Marabissi, who grew up in one of the most important pastry shops in the Valdichiana Senese, known for having created the renowned Torta di Chianciano: a dessert created for vacationers who flocked to Chianciano Terme from all over Italy to enjoy spa treatments. "It was my grandmother Jole who invented this cake, she was from Romagna. She thought about an appetizing cake that she could bring home, using local products and a product ... definitely not local, but brought by a loyal customer of the pastry shop, the Cavalier Tosolini, which in Friuli produces an amaretto liqueur with an exceptional flavor ".
And over sixty years later Massimiliano continues to use the same liqueur, both for the sake of tradition and to respect the palate: "the dessert must be sweet and tradition must be respected, we pay attention to the design of our packages and needs of our customers, but we are artisans and we follow the original recipes to make our products ".
The result of this compromise are delicious desserts, good to eat and beautiful to look at: from cantucci to panforte, from ricciarelli to croccante, the Sienese tradition is served.
