Extra virgin olive oil is a real passion at La Macina Oil Mill in Chianciano. Carrying on the family tradition is Elena, who with the help of her family has been cultivating her olive trees for over twenty years and in Autumn she crushes the olives of her company and many other small farmers in the area. But the passion for the precious olive oil does not end here, because the mill is open all year long for visits and tastings, even in an outdoor area overlooking the olive groves. And then there are many collectible pieces displayed in the internal tasting rooms. Evidence of traditional working methods in the nature and of oil production over the centuries, like an original wooden press from the last century.
The product is constantly evolving, this is an olive oil not satisfied with being good as tradition, but it is renewed with new machinery and constant updating. "My mother has always invested in the renovation of the oil mill, we recently bought a new disc crusher and closed kneading machines" says Laura, Elena's daughter: "The aim is to obtain an oil that keeps its organoleptic qualities more and more and reaches the tables with a strong and typically Tuscan flavor ".
