I Tre Capi is the name of an agricultural company, the name already celebrates the king of the garden in Valdichiana Senese: the Aglione (it literally means “big garlic”). Traditional Tuscan Agricultural Product (PAT), Aglione is the product that best represents the attachment to the territory of the Bettollini family who founded the company in Montallese in 1977, after a past as sharecroppers.

Starting with simple and traditional products such as Aglione, the whole family has set creativity in motion to create creams, sauces and condiments with a gourmet inclination. Monica, granddaughter of the founders of the company, tells us: "For example, the idea of ​​creating sprout pesto and proposing it as an appetizing condiment for pasta or for tasty croutons came from a custom of my mother: the flower of 'aglione is edible and she puts it back in a pan to flavor other dishes, especially in the periods when the aglione begins to run out and a new harvest is awaited ”.

The creative recipes that know how to enhance the flavors of the garden are the main feature of the I Tre Capi work, a company that grows fruit and vegetables using traditional methods and that today also reinvents itself by converting: "our products were born for self-consumption , we put them on our table every day and we offer them responsibly to our customers, offering a healthy and genuine product, the choice to acquire organic certification was natural ".

Monica's commitment is beyond the Company because she is also Regional President and National Vice-President of the Association of Women in the Field - Cia, a reality that supports the promotion and training of female entrepreneurship.
