The Cetona’s hills Olive growers olive mill is a reality characterized by the commitment and collaboration of over 200 producers in the area of ​​Cetona and neighboring municipalities for pressing and bottling Extra Virgin Olive Oil. Serena Pomponi, agronomist and oil sommelier has been working here for over twenty years and firmly believes in the responsibility of the Olive mill for the production of high quality Extra Virgin Olive Oil and the support of its members.

Due to the initiative of the Olive mill, a collaboration was born with the Sant'Anna Institute of Pisa and with the Entomologist Prof. Petacchi, which allowed the creation of a monitoring network of 12 olive groves which represents the local varieties and the territory: every week the Frantoio sends a telephone message to its olive growers communicating whether it is necessary to proceed with phytosanitary treatments or not; in this way it is possible to guarantee immediate and accurate intervention, minimizing the intervention only when necessary.

The attention in the supply chain starts from the olive grove and endures until the bottle: the olives that arrive in the Olive mill must be harvested within the previous 24 hours, they must be immediately pressed, with rapidity and attention to keep the product at a constant temperature and preserve the nutritional properties.

The Olive mill bottles Extra Virgin Olive Oil "capable of becoming" DOP Terre di Siena and IGP Toscano: the bitter aftertaste, the pinch in the throat and the intense green color of this olive oil reaches senses, telling you about excellence of this tasty and healthy product, and the certifications of the territory guarantee the origin and the regulated quality.

"Did you know that extra virgin olive oil produced in Tuscany does not cover the needs of the region? If everyone bought good extra virgin olive oil we would not be self-sufficient! " Serena insists: "This means that our task, in addition to producing excellent olive oil, is also to educate the public on the importance of bringing good and healthy food to your table every day".
