The Gran Riserva is the leading cheese of the Cugusi house: Silvana and her family produce it with high quality sheep’s milk, manual processing and they let it age for about 18 months in the cellar on spruce boards. The result is a finely grainy aged pecorino cheese, with a strong but sweet and persistent flavor… definitely memorable!
