Einkorn spelt (Triticum monococcum) is a variety of spelt with a long and fascinating history: it was probably the first cereal “domesticated” by man in the Neolithic era, abandoned in recent years in favor of varieties more suitable for intensive production. A recently revalued food, good for the palate and the body, with a high protein and vitamin content grown by Paolo in the Nenci Farm.
