"The symbol on our business card is the cypress, my sister drew it thirty years ago, when cypresses were not yet used by everyone!" to say it is Antonietta who, together with her husband Ernello and brothers, runs the Podere Bagnolo farm.
Between Trequanda and Pienza, in a verdant corner of Tuscany, where cypresses define the entire driveway, there is the Verdi Pascoli Dairy, opened just thirty years ago by Ernello. A truly peculiar and singular activity, perhaps for this reason Antonietta regrets the fact that cypresses are now so widespread as a symbol of Tuscany.
A family management and deliberately small, which by choice produces only the classic varieties of pecorino with its own milk, strictly following the seasonality of the product. “We know exactly what our sheep eat” Antonietta and Ernello tell us: “We are sure of the path, which we verify from the feeding of the sheep to the sale of the pecorino cheese. Our cycle is closed, it allows us to have maximum control over the product".
Antonietta's family bought the farm in the 1960s, giving life to a company that also produces organic extra virgin olive oil and offers tourists accommodation. A small paradise immersed in the intense green of Trequanda.
