Simplicity, love for tradition and respect for raw materials are the hallmarks of the Coveri Farm in Torrita di Siena, by Stefano and Carla. The siblings run the family business in Torrita di Siena following the organic regime for the production of ancient grains and cereals, the breeding of sheep and goats and the production of dairy products.
Their story does not begin in Valdichiana, but in the outskirts of Florence: Stefano and Carla's grandparents come from Castagno d'Andrea, a small hamlet of San Godenzo. At the end of the Second World War, their cottage was destroyed during the retreat of the German soldiers, and the family decided to take refuge in Valdichiana, where their cattle used to migrate. It is from this memory, and from the memory of the taste of good cheese made by her grandmother Artemisia, that the current company and the selection of products was born, made exclusively with raw materials grown and raised by themselves.
This is how raw milk pecorino cheeses are born, which stand out for their taste and production ethics; goat cheeses with a delicate taste and high nutritional value; einkorn spelt; organic wheat that becomes partially packaged and partially transformed flour for the production of Organic Durum Wheat Pici
