The Pecorino Riserva from Sanguineto cheese factory requires at least six months of seasoning and repeated external treatments with extra virgin olive oil. The result of this entirely manual process is a “canestrato” Pecorino cheese with an intense aroma and a strong flavor that makes worthy the waiting.
