The organic farm Podere Saragiolo has decided to transform its precious aubergines into a tasty spread cream for the benefit of aubergine lovers. The preparation is a vegetarian sauce ideal as an accompaniment to vegetables and aperitifs, but also as a condiment for pasta. The idea is inspired by the famous baba ganoush, typical of Arab cuisine, with a Tuscan reinterpretation that makes it delicious and tantalizing.
